Four Newish Restaurants Bring World Flavors to Chittenden County
click to enlarge Daria Bishop Tandoori chicken and vegetable thali at Laliguras Indian Nepali Restaurant. A s the Seven Days food team reflected on the state of Vermont's dining scene at the end of 2022, one of the unexpected highlights was an explosion of global cuisines. In a state where farm-to-table tends to drive the conversation — and where we have wood-fired pizza coming out of our ears — a new wave of Afghan, Argentinian, Bosnian, Colombian, Dominican, Filipino, Haitian, Indian, Iranian, Iraqi, Jamaican-British, Korean, Mexican, Puerto Rican, Somali and Taiwanese pop-ups, food carts, market vendors and restaurants is more than welcome.

The toastiness of the golden brown, bubbled flatbread balanced the generous portion of allium, rendering the naan just garlicky enough. The bread was not only delicious but also useful. The Windjammer Restaurant Adds a Wine Bar in South Burlington
click to enlarge Courtesy The new wine bar at the Windjammer Restaurant When the Windjammer Restaurant announced in June 2021 that it would no longer offer its beloved salad bar, a period of collective mourning ensued — or collective outcry, depending on which social media comments you read. As of mid-December, the longtime South Burlington restaurant has transformed the boat-shaped space that once held that salad bar into an evening wine bar. "Doing something different after over 40 years of having something the community loved is a hard pill to swallow," general manager Dan Phelan told Seven Days.

Quechee-Based Global Village Foods Brings Authentic African Cuisine to New England Universities
click to enlarge Kirk Kardashian Mel and Damaris Hall When Damaris and Mel Hall started selling samosas at Vermont street festivals in 1993, they made 30 at a time. Damaris, a trained chef from Kenya, was in charge of the cooking, while Mel, who grew up in Memphis, Tenn., set up the Coleman camp stove and the cash register. Today, as the owners of Global Village Foods in Quechee, the couple have roughly the same roles they had 30 years ago, but the scale is vastly different. With a 12-person staff, the company produces 5,000 samosas and 2,000 bulk entrées and ready-to-eat meals per day — all allergy-friendly, with gluten-free and vegan options.
